Nordic is a word used to describe very lightly roasted coffees. The name stems from the fact that roasters in Scandinavia, from as early as 2004, have popularised this style of very lightly roasted coffee.
Coffee from Sumatra is well-known for being low acid coffee. There are a number of reasons for this, but the most important is how the farmers process the coffee. It is referred to as wet hulling (or giling basah in the native language) and is quite different to the process of washing coffee cherries in Latin America.
Under-roasted coffee beans are pale green in color with a raw, grassy aroma and taste. The flavor profile and body of under-roasted coffee is considerably weak. Light Roast coffee beans are light brown in color with a lustrous quality. They have a floral aroma with hints of bright fruit.
Overall, sodas have significantly less caffeine than coffee, between 2-4x less. But there's another big difference to account for: sugar. Regular sodas tend to have ~35g of sugar, which is almost 2x as much as the American Heart Association suggests consuming daily.
